4 large russet potatoes
1 cup cooked shrimp, chopped
1 cup cooked crab meat
1 cup cream cheese, softened
1/2 cup shredded cheddar cheese
1/4 cup sour cream
2 tbsp butter
2 tbsp chopped green onions
1 tsp Old Bay seasoning
Salt and pepper to taste
Instructions
Preheat the oven to 400°F (200°C).
Pierce the russet potatoes with a fork and bake in the preheated oven for about 45-60 minutes or until tender.
While the potatoes are baking, prepare the filling. In a mixing bowl, combine shrimp, crab meat, cream cheese, cheddar cheese, sour cream, butter, green onions, Old Bay seasoning, salt, and pepper. Mix until well combined.
Once the potatoes are done, let them cool slightly, then cut them in half lengthwise and scoop out the insides into the mixing bowl, leaving a thin layer of potato in the skins.
Mix the scooped potato with the seafood mixture until well combined.
Spoon the mixture back into the potato skins.
Place the stuffed potatoes back in the oven and bake for an additional 15-20 minutes until the tops are golden and bubbly.
