A delightful sour cream coffee cake that is moist, tender, and perfectly spiced, bringing warmth and nostalgia to any gathering.

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1/2 cup chopped nuts (optional)
  • 1 teaspoon cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a medium bowl, mix together the all-purpose flour, baking soda, baking powder, and salt.
  3. Cream together the softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in the vanilla extract and sour cream until smooth.
  4. Add the dry ingredients to your wet mixture, mixing until just combined.
  5. Pour half of the batter into the prepared baking pan. Sprinkle with half of the nuts and half of the cinnamon, then pour the remaining batter and repeat.
  6. Bake for 30-35 minutes, or until a toothpick inserted comes out clean.
  7. Let cool in the pan for a few minutes before transferring to a wire rack to cool completely.

Notes

For an extra special treat, serve with whipped cream or vanilla ice cream. This cake can also be frozen for up to 3 months.
