Delicious homemade soft pretzel bites with a warm, buttery aroma that brings a taste of nostalgia.

Ingredients

Scale
  • 1 1/2 cups warm water
  • 1 packet active dry yeast (2 1/4 teaspoons)
  • 1 tablespoon sugar
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 1/4 cup baking soda
  • Coarse sea salt for topping
  • 1 egg, beaten (for egg wash)

Instructions

  1. Activate the yeast: In a large bowl, combine the warm water, yeast, and sugar. Stir gently and let sit for about 5 minutes until frothy.
  2. Form the dough: Add the flour and salt into the mixture, stir to combine, and then knead until smooth and elastic, about 5 minutes.
  3. Let the dough rise: Cover the bowl and place it in a warm spot for about 1 hour or until doubled in size.
  4. Preheat the oven: Set to 425°F (220°C) while preparing the pretzel bites.
  5. Shape the bites: Punch the risen dough down, divide, and roll each piece into bite-sized balls.
  6. Prepare the baking soda bath: In a pot, bring 8 cups of water to a boil and carefully add baking soda.
  7. Boil the pretzel bites: Using a slotted spoon, place a few bites in boiling water for about 30 seconds, then drain well.
  8. Arrange and egg wash: Transfer boiled bites to a greased baking sheet, brush with beaten egg, and sprinkle with sea salt.
  9. Bake until golden: Bake for 12-15 minutes or until golden brown.
