A delightful recreation of the Texas Roadhouse classic, this smothered chicken is topped with sautéed vegetables, crumbled turkey bacon, and drizzled with ranch dressing.

  • 4 boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon olive oil
  • 1 cup shredded cheddar cheese
  • 1 cup sliced mushrooms
  • 1 cup diced green bell pepper
  • 1 cup diced onion
  • 1 cup cooked crumbled turkey bacon
  • 1/2 cup ranch dressing
  • Fresh parsley, chopped

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pound the chicken breasts to an even thickness of about 1 inch.
  3. Season both sides with salt, black pepper, garlic powder, and onion powder.
  4. Sear the chicken in a large skillet with olive oil for 5-7 minutes on each side until golden brown.
  5. Sauté the sliced mushrooms, diced green bell pepper, and diced onion in the same skillet for 5-7 minutes until tender.
  6. Stir in the crumbled turkey bacon and cook for an additional 2-3 minutes.
  7. Assemble the dish by placing the seared chicken in a baking dish and topping with the sautéed vegetable mixture.
  8. Add shredded cheddar cheese and drizzle with ranch dressing over the top.
  9. Bake covered with foil for 25-30 minutes until the chicken reaches an internal temperature of 165°F (74°C).

Notes

Pair with mashed potatoes or a fresh salad. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
