  • ½ lb chopped bacon
  • 1 small onion (finely diced)
  • ½ cup BBQ sauce
  • ¼ cup brown sugar
  • 2 tablespoons molasses
  • 1 tablespoon yellow or Dijon mustard

Instructions

  1. Preheat the smoker to a steady temperature of 250–275 °F, using hickory, apple, or mesquite wood.
  2. Cook the chopped bacon in a skillet over medium heat until partially crisp, then remove and set aside.
  3. Sauté the diced onion and jalapeño (if using) in the bacon fat until softened and fragrant (about 3-5 minutes).

  5. Place the pan uncovered in the preheated smoker and let smoke for 2–3 hours, stirring once or twice until thick and bubbly.
  6. Serve hot as a side dish to your favorite grilled or smoked meats.
