  • 4 boneless, skinless chicken breasts
  • 1 cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • Salt and pepper to taste
  • Cooked rice, for serving (optional)

Instructions

  1. Arrange the chicken in the slow cooker.
  2. Create the sauce by mixing sweet chili sauce, soy sauce, minced garlic, and minced ginger.
  3. Pour the sauce over the chicken.
  4. Season with salt and pepper to taste.
  5. Slow cook on low for 6–7 hours or on high for 3–4 hours until tender.
  6. Shred the chicken in the sauce.
  7. Serve over cooked rice or enjoy on its own.

Notes

For an extra flavor boost, let shredded chicken sit in the sauce for 10 minutes before serving.
