A hearty Crock Pot recipe featuring tender potatoes, green beans, and sausage in a buttery Cajun-spiced sauce, perfect for family gatherings.

Ingredients

  • 1.5 – 2 lbs fresh green beans (trimmed and cut into 2–3″ pieces)
  • 1.5 lbs small potatoes (halved)
  • 1 large onion (diced)
  • 1 lb chicken or turkey sausage (sliced into rounds)
  • 1/2 cup butter
  • 1 tablespoon Cajun seasoning (divided)
  • 1/2 teaspoon pepper

Instructions

  1. Layer the halved potatoes evenly at the bottom of a large crock pot.
  2. Sprinkle with pepper and half of the Cajun seasoning.
  3. Place the stick of butter on top of the seasoned potatoes.
  4. Add the green beans and the diced onion over the potatoes.
  5. Sprinkle the remaining Cajun seasoning over these layers.
  6. Pile on the sliced chicken or turkey sausage.
  7. Cover and cook on HIGH for 4 hours or LOW for 6 hours, stirring gently once each hour.
  8. Taste before serving and adjust seasoning if necessary.

Notes

This dish pairs well with a green salad or fresh bread. Can be stored in an airtight container for up to 3 days or frozen for 2 months.
