A creamy and comforting dish made in a slow cooker with tender chicken, penne pasta, and a delicious cheese sauce.

  • 1.5 lbs boneless, skinless chicken breasts, cut into bite-sized pieces
  • 8 oz penne pasta, uncooked
  • 2 cups shredded cheddar cheese
  • 1 cup cream cheese
  • 1 cup chicken broth
  • 1 cup milk
  • 1 cup diced bell peppers
  • 1 cup chopped spinach
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Combine the chicken, bell peppers, spinach, garlic powder, onion powder, Italian seasoning, salt, and pepper in the slow cooker.
  2. Pour in the chicken broth and milk, stirring gently to combine.
  3. Cover and cook on low for 4 hours or high for 2 hours, until the chicken is cooked through and the vegetables have softened.
  4. Stir in the cream cheese and shredded cheddar until melted and creamy.
  5. Add the uncooked penne pasta, mixing well to ensure it is submerged in the sauce.
  6. Cover and cook on high for an additional 30 minutes, or until the pasta is tender.
  7. Serve hot, garnished with additional cheese or fresh herbs if desired.
