A comforting blend of cheese tortellini with crispy bacon in a rich, creamy sauce, perfect for weeknight dinners or cozy feasts.

Ingredients

  • 12 oz (340g) cheese tortellini
  • 6 slices bacon, chopped
  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup chopped fresh parsley, for garnish
  • Additional grated Parmesan cheese, for serving

Instructions

  1. Cook the cheese tortellini according to package instructions. Drain and set aside.
  2. Crisp the chopped bacon over medium heat until crispy. Remove and drain on paper towels.
  3. Add the olive oil to the skillet and sauté the chopped onion until translucent, about 5 minutes.
  4. Add the minced garlic and cook for another minute.
  5. Reduce the heat to low and pour in the heavy cream, stirring and scraping up bacon bits.
  6. Whisk together eggs and Parmesan cheese in a separate bowl until smooth.
  7. Slowly add the egg mixture to the skillet, stirring constantly until thickened.
  8. Add the cooked tortellini and crispy bacon, tossing to coat. Season with salt and pepper.
  9. Remove from heat and sprinkle with fresh parsley.
  10. Serve immediately with additional grated Parmesan cheese if desired.

Notes

For added flavor, you can include sautéed mushrooms or spinach. Adjust the cooking time if using different pasta shapes.
