A light and refreshing Shrimp Scampi made with succulent shrimp, fragrant garlic, and a hint of lemon.

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 8 ounces linguine or spaghetti
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 cup white wine (or chicken broth)
  • 1 lemon, juiced
  • 1/4 teaspoon red pepper flakes
  • Salt and pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Cook the linguine according to package directions; drain and set aside.
  2. In a large skillet, heat the butter and olive oil over medium heat.
  3. Add the minced garlic and sauté until fragrant, about 1 minute.
  4. Add the shrimp and cook until they turn pink, about 2-3 minutes per side.
  5. Pour in the white wine, lemon juice, and red pepper flakes; simmer for 2 minutes.
  6. Toss the cooked pasta into the skillet to combine, and season with salt and pepper to taste.
  7. Garnish with fresh parsley before serving.

Notes

Make sure to not overcook the shrimp; they turn rubbery quickly. Freshly squeezed lemon juice makes a significant difference.
