  • 1 tablespoon olive oil
  • 12 ounces smoked sausage (sliced)
  • 1 medium onion (diced)
  • 1 medium green bell pepper (diced)
  • 1 medium red bell pepper (diced)
  • 2 celery stalks (diced)
  • 3 cloves garlic (minced)
  • 1 1/2 cups long-grain white rice
  • 2 teaspoons Cajun seasoning
  • 3 cups chicken broth
  • 1 pound shrimp (peeled and deveined)
  • Fresh parsley for garnish
  • 2 green onions for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Brown the sliced sausage in the pot until nicely browned, stirring occasionally.
  3. Sauté the diced onion, green and red bell peppers, celery, and minced garlic until tender and fragrant, about 5 minutes.
  4. Add the long-grain white rice and Cajun seasoning; stir well to coat.
  5. Pour in the chicken broth and bring to a gentle boil, stirring to combine.
  6. Simmer the mixture on low heat, covered, for about 20 minutes.
  7. Cook the shrimp, stirring them in until they turn pink and opaque, about 5 minutes.
  8. Garnish with fresh parsley and sliced green onions before serving.
