A delightful blend of shrimp, fresh spinach, and penne pasta that comes together in under 30 minutes.

Ingredients

  • 8 oz penne pasta
  • 1 lb shrimp, peeled and deveined
  • 2 cups fresh spinach
  • 3 cloves garlic, minced
  • 1/4 cup olive oil
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. Heat the olive oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté until fragrant, about 1 minute.
  4. Cook the shrimp in the skillet until they turn pink and opaque, approximately 2-3 minutes per side.
  5. Toss in the fresh spinach and allow it to wilt, about 1-2 minutes.
  6. Combine everything by adding the cooked penne pasta to the skillet and tossing gently.
  7. Season the dish with salt, pepper, and red pepper flakes to taste.
  8. Serve warm, topped with grated Parmesan cheese.

Notes

For a twist, consider adding sun-dried tomatoes or swapping shrimp for chicken or tofu.
