A bright and refreshing shrimp ceviche marinated in lime juice and mixed with fresh vegetables.

Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup lime juice
  • 1 medium red onion, diced
  • 1 medium tomato, diced
  • 1 cucumber, diced
  • 1 jalapeño, minced
  • 1/4 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Marinate the shrimp in lime juice for about 30 minutes or until they turn opaque.
  2. Drain the excess lime juice from the shrimp and combine them with diced red onion, tomato, cucumber, minced jalapeño, and cilantro in a bowl.
  3. Season with salt and pepper to taste.
  4. Chill the ceviche in the refrigerator for at least 15 minutes before serving.
  5. Serve with tortilla chips or on its own as a refreshing snack.

Notes

For variations, consider adding mango or avocado for a sweet twist. Leftovers should be stored in an airtight container and consumed within 1-2 days.
