A comforting and hearty dish featuring seasoned meat, vegetables, and creamy mashed potatoes.

Ingredients

  • 1 lb ground lamb or beef
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 4 cups mashed potatoes
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Heat the olive oil in a skillet over medium heat.
  3. Add the chopped onion, diced carrots, and minced garlic to the skillet. Cook until softened, about 5-7 minutes.
  4. Add the ground lamb or beef to the skillet. Cook until browned, breaking it apart as it cooks. Drain any excess fat.
  5. Stir in the tomato paste, beef broth, Worcestershire sauce, salt, and pepper. Incorporate the frozen peas and let it simmer for about 5 minutes.
  6. Transfer the savory meat mixture to a baking dish and spread the mashed potatoes over the top.
  7. Create peaks and valleys in the mashed potatoes for texture, if desired.
  8. Bake in the preheated oven for 25-30 minutes, or until the top is golden and crispy.
  9. Let the Shepherd’s Pie cool slightly before serving.

Notes

Use day-old mashed potatoes to save time. Feel free to mix and match vegetables based on preference.
