A cozy and hearty soup that captures all the delicious flavors of traditional Shepherd’s Pie, perfect for busy weeknights.

  • 1 lb ground beef
  • 1 cup diced carrots
  • 1 cup diced potatoes
  • 1 cup diced celery
  • 1 onion, chopped
  • 4 cups beef broth
  • 1 cup frozen peas
  • 2 tablespoons tomato paste
  • 1 teaspoon garlic powder
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. Heat the olive oil in a large pot over medium heat until shimmering.
  2. Add the chopped onions, carrots, celery, and potatoes. Sauté until the vegetables begin to soften, about 5-7 minutes.
  3. Stir in the ground beef and cook until browned, breaking it up as it cooks.
  4. Add the tomato paste, garlic powder, thyme, salt, and pepper. Cook for another minute.
  5. Pour in the beef broth and bring everything to a boil.
  6. Reduce heat and simmer for 15-20 minutes, until the vegetables are tender.
  7. Stir in the frozen peas and cook for another 5 minutes.
  8. Serve hot, paired with a warm sandwich.

Notes

For a thicker soup, add a cornstarch slurry during simmering. Customize with your favorite vegetables.
