Transform the classic quesadilla into a family-friendly feast, baked to golden perfection on a single sheet pan.

Ingredients

  • 8 flour tortillas
  • 2 cups shredded cheese (cheddar or a blend)
  • 1 can black beans, drained and rinsed
  • 1 cup cooked chicken, shredded
  • 1 cup bell pepper, diced
  • 1 cup corn (frozen or canned)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Cooking spray or oil for greasing the pan

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Grease a large baking sheet with cooking spray or oil.
  3. Layer four tortillas on the baking sheet.
  4. Add half the cheese, black beans, chicken, bell peppers, corn, cumin, chili powder, salt, and pepper.
  5. Top with the remaining cheese and place the other four tortillas on top.
  6. Bake in the preheated oven for 15-20 minutes.
  7. Slice and serve warm.

Notes

Leftovers can be stored for up to 3 days in an airtight container. Reheat in the oven or air fryer for best results.
