Delicious and easy-to-make breakfast tacos with fluffy scrambled eggs, sautéed bell peppers, and melty cheese, all baked in a single sheet pan.

Ingredients

  • 6 large eggs
  • 1 cup milk
  • 1 cup shredded cheese (cheddar or a blend)
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 12 small tortillas
  • Salt and pepper to taste
  • Salsa and avocado for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Whisk together the eggs and milk until thoroughly blended. Season with salt and pepper to taste.
  3. Spread the diced bell peppers and onions evenly across a greased sheet pan.
  4. Pour the egg mixture over the vegetables.
  5. Top with a generous layer of shredded cheese.
  6. Bake for 20-25 minutes, until the egg is set and the cheese is melted.
  7. Remove from the oven, let it cool slightly, cut into squares, and serve in warm tortillas with salsa and avocado.
