A vibrant and creamy seafood pasta salad perfect for summer gatherings, featuring shrimp, crab, and fresh veggies.

Ingredients

  • 2 cups small pasta shapes (shells or elbow macaroni)
  • 1 pound shrimp (cooked until pink)
  • 8 ounces imitation crab (or real crab or lobster)
  • 2 stalks celery (finely diced)
  • 1 medium red bell pepper (finely diced)
  • 1 medium red onion (finely diced)
  • 1 cup mayonnaise (or Greek yogurt)
  • 1/2 cup sour cream
  • 1 tablespoon Dijon mustard (or yellow mustard)
  • 2 tablespoons lemon juice (fresh juice recommended)
  • 1 teaspoon Old Bay seasoning (or another seafood seasoning)
  • To taste: salt and pepper

Instructions

  1. Cook the pasta: Bring salted water to a boil, add pasta shapes, cook until al dente, then drain and rinse with cold water.
  2. Prepare the seafood: Ensure shrimp are cooked and pink; chop fresh crab or lobster if using.
  3. Chop the veggies: Finely dice celery, red bell pepper, and red onion.
  4. Mix the dressing: Combine mayonnaise, sour cream, mustard, lemon juice, Old Bay, salt, and pepper in a bowl.
  5. Combine it all: In a large bowl, mix pasta, shrimp, crab, and veggies; gently fold in dressing.
  6. Chill and serve: Cover and refrigerate for at least 30 minutes before serving.

Notes

This salad can be stored in an airtight container in the fridge for up to 3 days. You may need to add more dressing before serving.
