This creamy Garlic Butter Shrimp Scampi Lasagna blends classic lasagna with shrimp scampi, offering a delightful and comforting meal.

  • 9 lasagna noodles
  • 1 pound shrimp, peeled and deveined
  • 4 tablespoons garlic, minced
  • 1/2 cup butter
  • 1 cup heavy cream
  • 1 cup Parmesan cheese, grated
  • 2 cups mozzarella cheese, shredded
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Cook the lasagna noodles according to package instructions, then drain and set them aside.
  2. In a large skillet, melt the butter over medium heat. Once melted and sizzling, add the minced garlic and sauté until fragrant, about one minute.
  3. Add the shrimp to the skillet and cook until they turn pink, about 2-3 minutes. Stir in the heavy cream, lemon juice, salt, and pepper, allowing the mixture to swirl together into a creamy sauce.
  4. To assemble the lasagna, spread a layer of the shrimp mixture at the bottom of a baking dish. Add a layer of noodles, followed by a sprinkle of Parmesan cheese and a layer of mozzarella. Repeat this layering process until you’ve used all your ingredients, finishing with a generous amount of cheese on top.
  5. Bake in the preheated oven for 30-35 minutes, or until the top is golden and bubbling with deliciousness.
  6. Once baked, remove the lasagna from the oven and let it cool slightly. Garnish with freshly chopped parsley and serve warm.

Notes

Pairs well with Caesar salad or garlic bread. Can be prepped ahead and stored in the refrigerator until ready to bake.
