  • Chopped fresh herbs (like parsley or chives)
  • Olive oil or cooking spray for the waffle iron

Instructions

  1. Preheat the waffle iron according to the manufacturer’s instructions.
  2. Combine the grated zucchini, flour, eggs, Parmesan cheese, baking powder, salt, pepper, garlic powder, and fresh herbs in a large bowl. Mix until well combined.
  3. Grease the waffle iron with olive oil or cooking spray.
  4. Pour the batter onto the waffle iron, spread it evenly, and close the lid. Cook until golden and crispy, about 5-7 minutes.
  5. Repeat with the remaining batter, greasing the waffle iron each time.
