  • 4 cloves garlic, minced
  • 4 tablespoons olive oil

  • 1/2 teaspoon black pepper
  • 1 teaspoon dried oregano
  • 8 ounces feta cheese, crumbled
  • Fresh parsley, for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the baby potatoes in half and place them in a large bowl.
  3. Add the minced garlic, olive oil, salt, pepper, and dried oregano to the potatoes, mixing well to coat.
  4. Spread the potatoes evenly on a baking sheet.
  5. Sprinkle the crumbled feta cheese generously over the potatoes.
  6. Roast in the preheated oven for about 30-35 minutes, or until the potatoes are golden and tender.
