Warm and hearty breakfast enchiladas stuffed with savory sausage, fluffy eggs, and gooey cheese, perfect for a cozy brunch.

  • 8 flour tortillas
  • 1 pound breakfast sausage
  • 6 eggs
  • 1 cup milk
  • 1 cup shredded cheese
  • 1 cup salsa
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon olive oil (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cook the breakfast sausage in a skillet over medium heat until browned and crumbly.
  3. Whisk together the eggs, milk, salt, and pepper in a bowl.
  4. Combine the egg mixture with the browned sausage in the skillet and stir until eggs are fully set.
  5. Assemble the enchiladas by placing sausage and egg mixture in the center of each tortilla, sprinkle with cheese, and roll tightly.
  6. Prepare for baking by pouring salsa over the rolled tortillas and sprinkle with remaining cheese.
  7. Bake covered with foil for 20 minutes, then remove foil and bake for an additional 10 minutes.
  8. Serve warm, garnished with extra salsa, sour cream, or fresh cilantro if desired.

Notes

For added flavor, consider mixing in chopped bell peppers or onions with the sausage.
