  • 1 cup cooked salmon
  • 1 avocado, sliced
  • 1 cup steamed broccoli
  • 1/2 cup shredded carrots
  • 1/4 cup edamame
  • 1 tbsp sesame seeds
  • 2 tbsp soy sauce or tamari
  • 1 tbsp olive oil
  • 1 tsp lemon juice

Instructions

  1. Start by cooking the quinoa according to package instructions. Rinse it under cold water first to remove any residual bitterness. Combine it in a pot with double the amount of water and bring it to a gentle boil. Once boiled, reduce to a simmer and cover for about 15 minutes, or until the water is absorbed and the quinoa is fluffy.
  2. While the quinoa cooks, prepare the salmon by grilling or pan-searing it until cooked through. If grilling, aim for about 4-5 minutes on each side, depending on thickness, until it flakes easily with a fork.
  3. Meanwhile, steam the broccoli for around 5 minutes until vibrant and tender. You can quickly prepare the remaining vegetables by shredding the carrots and measuring out the edamame, making this an efficient process.
  4. In a bowl, layer the quinoa as the base, creating a warm, welcoming foundation for the other ingredients.
  5. Top with cooked salmon, inviting avocado slices, steamed broccoli, shredded carrots, and the brilliant green edamame. Each ingredient should beckon to be tried.
