  • 1 rotisserie chicken, shredded
  • 8 oz mushrooms, sliced
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups chicken broth
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Optional: fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat until it shimmers.
  2. Add the diced onion, carrots, and celery to the pot. Sauté until softened, about 5-7 minutes.
  3. Stir in the minced garlic and sliced mushrooms, cooking for another 3-4 minutes until the mushrooms are tender.
  4. Add the shredded rotisserie chicken, chicken broth, thyme, salt, and pepper to the pot. Stir well to combine.
  5. Bring the mixture to a simmer. Let it cook for 10-15 minutes to blend the flavors beautifully.
  6. Adjust seasoning as needed. Garnish with fresh parsley if desired before serving.
