A delightful combination of warm roasted tomatoes and creamy burrata cheese, perfect for any occasion.

Ingredients

  • 1.1 lb ripe tomatoes (cherry, plum, or mixed, halved)
  • 23 tbsp olive oil
  • 23 garlic cloves (minced)
  • 12 tsp balsamic vinegar (optional)
  • Salt and freshly ground black pepper (to taste)
  • 1 ball burrata cheese
  • Fresh basil leaves
  • Crusty bread for serving (optional)

Instructions

  1. Preheat the oven to 400 °F (200 °C).
  2. Toss halved tomatoes with olive oil, minced garlic, balsamic vinegar (if using), salt, and pepper until evenly coated.
  3. Roast the tomatoes for 20 to 25 minutes until soft and caramelized at the edges.
  4. Remove from the oven and let the tomatoes cool slightly before transferring them to a serving platter or bowl.
  5. Place the burrata in the center or on top of the warm roasted tomatoes.
  6. Drizzle with extra olive oil, scatter fresh basil leaves on top, and serve warm with crusty bread.

Notes

Use ripe, in-season tomatoes for the best flavor. Feel free to experiment with other herbs or add olives for a twist.
