A creamy and vibrant dip made with roasted red peppers and chickpeas, perfect for snacks or gatherings.

Ingredients

  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1/2 cup roasted red peppers, drained
  • 1/4 cup tahini
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 garlic clove, minced
  • 1/2 teaspoon cumin
  • Salt to taste
  • Water as needed

Instructions

  1. Combine all ingredients in a food processor, including chickpeas, roasted red peppers, tahini, olive oil, lemon juice, garlic, cumin, and salt.
  2. Blend until smooth, adding water as needed to achieve the desired consistency.
  3. Taste and adjust seasoning if necessary, adding more salt or lemon juice to your liking.
  4. Serve with pita bread or vegetable sticks for a refreshing and healthy snack.

Notes

Leftover hummus can be stored in an airtight container in the refrigerator for up to five days. To restore its creamy texture, stir in a little water or olive oil if it thickens.
