Ingredients

  • 1 pound asparagus, trimmed
  • 1 pound carrots, peeled and cut into sticks
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Combine the asparagus and carrots in a large bowl.
  3. Drizzle the olive oil over the vegetables and sprinkle with salt, pepper, garlic powder, and thyme.
  4. Toss the vegetables until evenly coated.
  5. Spread the vegetables in a single layer on a baking sheet.
  6. Roast in the oven for 20-25 minutes, stirring halfway through.
  7. Cool for a few minutes before serving.

Notes
