A delightful twist on a breakfast classic, these colorful pancakes are perfect for festive gatherings and summer celebrations.

Ingredients

Scale
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • Red food coloring
  • Blue food coloring
  • Whipped cream (for topping)
  • Fresh strawberries (for garnish)
  • Fresh blueberries (for garnish)

Instructions

  1. Combine Dry Ingredients: In a large bowl, mix together flour, sugar, baking powder, and salt until everything is evenly combined.
  2. Whisk Wet Ingredients: In another bowl, whisk together the milk, egg, and melted butter until smooth and well combined.
  3. Mix Wet and Dry Ingredients: Take the wet ingredients and pour them into the bowl with the dry ingredients. Gently combine them until just mixed. (Be careful not to overmix; a few lumps are perfectly fine!)
  4. Divide and Color the Batter: Divide the pancake batter evenly into three separate bowls. Leave one bowl plain, then add red food coloring to the second bowl and blue to the third, stirring until the colors are vibrant.
  5. Heat the Griddle: Heat a griddle or frying pan over medium heat and lightly grease it with butter or cooking spray to prevent sticking.
  6. Create Colorful Pancakes: For each pancake, pour a portion of the plain, red, and blue batter onto the griddle in the shape of a ring, ensuring they overlap slightly.
  7. Cook Until Perfect: Cook until bubbles form on the surface and the edges appear set. Carefully flip the pancakes over and cook until they turn a lovely golden brown.
  8. Serve with a Smile: Stack the colorful pancakes and generously top with whipped cream, then add fresh strawberries and blueberries for a vibrant finish.

Notes

Don’t overmix the batter, and keep an eye on the heat to ensure perfect pancakes.
