A nutritious and tasty quinoa salad packed with healthy ingredients, perfect for any meal.

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/4 cup parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water.
  2. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat, cover, and simmer for about 15 minutes or until the water is absorbed.
  3. Fluff the quinoa with a fork and let it cool.
  4. In a large bowl, combine cooked quinoa, tomatoes, cucumber, bell pepper, red onion, and parsley.
  5. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  6. Pour the dressing over the salad and toss to combine.
  7. Serve chilled or at room temperature.

Notes

For extra flavor, try adding feta cheese or olives. Ensure to rinse the quinoa well before cooking to remove any bitterness.
