A vibrant and refreshing Quinoa Black Bean Salad filled with protein-packed ingredients perfect for any meal.

Ingredients

  • 1 cup quinoa
  • 1 can black beans, rinsed and drained
  • 1 bell pepper, diced
  • 1 cup corn, frozen or fresh
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water to remove its natural coating, called saponin, which can taste bitter.
  2. Cook quinoa according to package instructions, using a 2:1 water-to-quinoa ratio.
  3. Combine your cooked quinoa, black beans, diced bell pepper, corn, red onion, and chopped cilantro in a large bowl.
  4. Whisk together olive oil, lime juice, salt, and pepper in a separate small bowl.
  5. Dress the salad by pouring the dressing over and gently tossing to combine.
  6. Chill in the fridge for 30 minutes before serving to let the flavors meld.

Notes

Great as a side dish or a light meal on its own. Store leftovers in an airtight container for up to 3 days.
