A moist and cozy pumpkin bread that captures the essence of autumn with its warm spices and tender crumb.

Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • ½ teaspoon ginger
  • 1 cup sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 cup canned pumpkin puree
  • ¼ cup water
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour a 9×5 inch loaf pan.
  2. Whisk together all-purpose flour, baking soda, baking powder, salt, cinnamon, nutmeg, and ginger in a bowl.
  3. Mix the sugar and vegetable oil until smooth in a large bowl.
  4. Crack in the eggs one at a time, mixing well after each addition.
  5. Stir in the canned pumpkin puree, water, and vanilla extract until combined.
  6. Add the dry ingredients to the wet ingredients, stirring gently until just blended.
  7. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
  8. Bake for 60-75 minutes, or until a toothpick comes out clean.
  9. Let the bread cool in the pan for about 10 minutes before turning it out onto a wire rack.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days.
