A comforting, creamy potato soup that’s simple to make and perfect for cozy nights.

Ingredients

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cups vegetable broth
  • 1 cup milk or cream
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Optional toppings: chives, cheese, bacon

Instructions

  1. Melt the butter over medium heat in a large pot. Add the chopped onion and sauté until translucent.
  2. Add the diced potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 20 minutes.
  3. Puree the soup to your desired consistency using an immersion blender, or transfer to a blender in batches.
  4. Stir in milk or cream and season with salt and pepper. Heat through.
  5. Serve hot, garnished with optional toppings.

Notes

Cut the potatoes into similar sizes for even cooking. You can add garlic or herbs for extra flavor.
