  • 1 cup unsalted pistachios
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/2 cup unsalted butter (softened)
  • 1 cup granulated sugar
  • Zest of 1 lemon
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 large egg white
  • 1/2 cup sour cream
  • 2 teaspoons vanilla extract
  • 8 ounces cream cheese (softened)
  • 3 cups powdered sugar

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan with butter or non-stick spray.
  2. In a bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until evenly mixed.
  3. Beat together the softened butter and granulated sugar until creamy and smooth.
  4. Add the lemon zest and vegetable oil, mixing until well combined.
  5. Mix in the eggs one at a time, then add the sour cream and vanilla extract, and continue to mix until smooth.
  6. Gradually fold the dry ingredients into the wet mixture, then fold in the ground pistachios.
  7. Pour the batter into the prepared pan and spread it evenly. Bake for 30-35 minutes.
  8. Blend the softened cream cheese, egg, and powdered sugar together until smooth.
  9. Spread the cream cheese mixture over the cooled cake layer and bake for an additional 20-25 minutes.
  10. Allow the cake to cool completely in the pan before slicing it into squares.

Notes

Serve with whipped cream or vanilla ice cream for extra indulgence. Store leftovers in an airtight container for up to one week.
