  • 1 packet taco seasoning
  • 1 cup cooked rice
  • 1 can black beans, rinsed and drained
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1/2 cup shredded cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa
  • Lettuce, for garnish

Instructions

  1. Brown the ground beef in a skillet over medium heat. Once browned, drain any excess fat.
  2. Add the taco seasoning to the beef and stir to coat thoroughly.
  3. Prepare the base by combining rice, black beans, corn, and diced tomatoes in a large bowl.
  4. Layer the seasoned beef mixture on top of the rice mixture.
  5. Add toppings with diced avocado, shredded cheese, sour cream, and salsa.
  6. Garnish with torn pieces of lettuce.
