A classic pineapple upside down cake featuring caramelized brown sugar and juicy pineapple, perfect for family gatherings or a sweet treat.

  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 can (20 oz) pineapple slices, drained
  • Maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the butter in a 9×13 inch baking dish, then sprinkle the brown sugar on top.
  3. Arrange the drained pineapple slices on top of the brown sugar mixture, adding a maraschino cherry in the center of each slice.
  4. Mix the all-purpose flour, granulated sugar, baking powder, and salt in a mixing bowl.
  5. Combine the milk, eggs, and vanilla extract in another bowl.
  6. Pour the wet ingredients into the dry mixture and stir until just combined.
  7. Pour the batter over the pineapple and cherries evenly.
  8. Bake in the preheated oven for 35-40 minutes.
  9. Cool for a few minutes before inverting onto a serving plate.

Notes

Serve warm with vanilla ice cream or whipped cream. Store leftovers at room temperature for 2-3 days.
