A vibrant, creamy twist on a classic dessert that combines the sweet tang of pineapple with luscious white chocolate and cherries.

Ingredients

Scale
  • 2 cups white chocolate chips
  • 1 can (15 oz) crushed pineapple, drained
  • 1/2 cup sweetened condensed milk
  • 1/2 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped maraschino cherries
  • 1/4 cup chopped pecans or walnuts (optional)
  • A pinch of salt

Instructions

  1. Melt the Chocolate and Butter: In a medium saucepan over low heat, combine the unsalted butter and white chocolate chips. Stir continuously until the mixture is smooth and velvety.
  2. Create a Creamy Mixture: Once melted, stir in the sweetened condensed milk, vanilla extract, and a pinch of salt into the chocolate mixture, continuing to stir until creamy and well combined.
  3. Add the Fruity Goodness: Gently fold in the crushed pineapple, chopped maraschino cherries, and the chopped nuts if you’re using them. Be careful not to overmix; you want to keep the chunks of fruit visible.
  4. Spread the Mixture: Pour the mixture into a greased 8×8 inch dish, spreading it evenly to ensure every square is equally delicious.
  5. Chill Until Set: Pop the dish in the refrigerator for at least 240 minutes (or if you’re feeling impatient, even longer doesn’t hurt). This time is essential to let the fudge set perfectly.
  6. Cut and Serve: Once chilled and set, remove from the fridge and cut the fudge into squares. Serve and watch your loved ones devour these little bites of happiness.

Notes

Make sure to drain the crushed pineapple thoroughly before mixing to avoid excess moisture in the fudge. Don’t rush the melting process!
