  • 1 cup brown sugar
  • 1 can (20 oz) sliced pineapple in juice
  • Maraschino cherries
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup milk
  • 2 large eggs
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Melt the butter and pour it into the bottom of a 9-inch round cake pan.
  3. Sprinkle brown sugar evenly over the melted butter.
  4. Arrange the pineapple slices on top of the brown sugar, placing a cherry in the center of each slice.
  5. Combine the flour, granulated sugar, baking powder, and salt in a mixing bowl.
  6. Mix the milk, eggs, and vanilla extract in another bowl, then add to the dry ingredients and mix until smooth.
  7. Pour the batter over the pineapple slices in the pan, ensuring even coverage.
  8. Bake for 35-40 minutes or until a toothpick comes out clean.
  9. Cool for 5 minutes, then invert onto a serving plate.
