A refreshing drink that combines the sweetness of pineapple and the tartness of fresh lemons, enhanced with a splash of cranberry juice.

  • 4 cups Water
  • 1 cup Granulated Sugar
  • 810 Fresh Lemons (Juiced)
  • 1 cup Cranberry Juice Cocktail
  • Ice Cubes (as needed)
  • Lemon Slices (for garnish)
  • Pineapple Wedges (for garnish)
  • Fresh Mint Sprigs (for garnish)

Instructions

  1. Prepare the Pineapple Base: Peel, core, and chop the pineapple into chunks.
  2. Create the Simple Syrup: In a medium saucepan, combine pineapple chunks, water, and sugar, and heat until sugar dissolves.
  3. Blend the Pineapple Mixture: Cool slightly, then blend until smooth.
  4. Strain and Extract Juice: Use a fine mesh strainer to extract juice into a large pitcher.
  5. Add Lemon Juice: Juice fresh lemons and add to pitcher.
  6. Mix in Cranberry Juice: Pour in cranberry juice, stirring to blend.
  7. Chill and Serve: Refrigerate until chilled, then pour over ice and garnish as desired.

Notes

Adjust sugar based on sweetness of pineapple; can use sparkling water for a fizzy version.
