A vibrant and flavorful pineapple chicken stir fry that combines tender chicken, colorful vegetables, and sweet pineapple in a delicious sauce.

  • 1 pound chicken breast (cut into bite-sized pieces)
  • 2 cups bell peppers (chopped)
  • 1 cup broccoli (cut into florets)
  • 1 cup carrots (sliced)
  • 1 cup pineapple chunks (fresh or canned)
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic (minced)
  • 2 tablespoons cooking oil
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by washing and chopping your vegetables and cutting the chicken into bite-sized pieces.
  2. Heat cooking oil over medium-high heat in a wok or large skillet.
  3. Add the bite-sized chicken pieces and season with salt and pepper. Stir-fry for about 5-7 minutes until cooked through.
  4. Incorporate the bell peppers, broccoli, and carrots. Stir-fry for another 3-4 minutes until tender-crisp.
  5. Toss in the pineapple chunks, garlic, soy sauce, and honey. Stir well to combine and let flavors meld.
  6. Cook for an additional 2-3 minutes until everything is heated through.

Notes

Serve with steamed rice or noodles, and consider adding sesame seeds or green onions for garnish. Leftovers can be stored in an airtight container for up to 3 days.
