  • 1 pound chicken breast (cut into bite-sized pieces)
  • 2 cups bell peppers (chopped)
  • 1 cup broccoli (cut into florets)
  • 1 cup carrots (sliced)
  • 1 cup pineapple chunks (fresh or canned)
  • 3 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 cloves garlic (minced)
  • 2 tablespoons cooking oil
  • Salt and pepper to taste

Instructions

  1. Prepare all ingredients by washing and chopping the vegetables and cutting the chicken into bite-sized pieces.
  2. Heat cooking oil in a wok or large skillet over medium-high heat.
  3. Add the chicken pieces, season with salt and pepper, and stir-fry for about 5-7 minutes until cooked through.
  4. Incorporate bell peppers, broccoli, and carrots; stir-fry for another 3-4 minutes until they are tender-crisp.
  5. Add the pineapple chunks, minced garlic, soy sauce, and honey; stir well to combine everything evenly.
  6. Cook for an additional 2-3 minutes until heated through. Taste and adjust seasoning if needed.

Notes

This stir fry can easily be customized with your favorite vegetables or proteins. Pairs well with jasmine rice or crispy fried rice.
