A moist and delicious bread that combines the sweetness of ripe bananas with the tang of crushed pineapple, perfect for breakfast or as a snack.

  • 2 ripe bananas
  • 1 cup crushed pineapple, drained
  • 1/2 cup sugar
  • 1/4 cup melted butter
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the 2 ripe bananas until smooth and creamy.
  3. Add the crushed pineapple, 1/2 cup sugar, 1/4 cup melted butter, 1 beaten egg, and 1 teaspoon vanilla extract. Mix well.
  4. Combine 1 1/2 cups all-purpose flour, 1 teaspoon baking soda, and 1/4 teaspoon salt in another bowl.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  6. Pour the batter into a greased loaf pan.
  7. Bake for 50-60 minutes or until a toothpick inserted comes out clean.
  8. Let cool in the pan for 10 minutes before transferring to a wire rack.

Notes

Store leftovers in an airtight container at room temperature for up to 4 days. For longer storage, freeze slices individually for up to 3 months.
