A vibrant and quick-to-prepare Pesto Tortellini Salad that bursts with flavor, perfect for gatherings and picnics.

Ingredients

  • 1 package tortellini (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 cup mozzarella balls or cubed mozzarella cheese
  • 1/2 cup pesto sauce
  • 1/4 cup pine nuts (optional)
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Start by bringing a large pot of water to a boil. Cook the tortellini according to the package instructions. Once they’re al dente, drain and let them cool slightly.
  2. Combine the cooked tortellini with the cherry tomatoes and mozzarella in a large bowl.
  3. Add in the luscious pesto sauce, gently toss to combine until everything is coated evenly.
  4. Sprinkle in some salt and pepper, then taste and adjust as needed.
  5. If using pine nuts, sprinkle them on top for an added crunch.
  6. Finish with fresh basil before serving immediately or chilling in the fridge for later.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. For meal prep, keep the dressing separate until serving.
