A quick and delicious Pesto Chicken Pasta that merges vibrant flavors in a simple process, ideal for any occasion.

Ingredients

  • 2 Chicken breasts
  • 8 oz Pasta (e.g., penne or fusilli)
  • 1 cup Pesto sauce
  • 1/2 cup Parmesan cheese, grated
  • 2 tbsp Olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Bring a pot of salted water to a boil and cook the pasta according to package instructions. Once al dente, reserve a cup of pasta water for later, then drain and set it aside.
  2. In a large skillet, heat a generous drizzle of olive oil over medium heat.
  3. Season chicken breasts liberally with salt and pepper. Place them in the skillet and cook until golden and cooked through, about 6-7 minutes per side.
  4. Remove the chicken from the skillet and let it rest for a few minutes before slicing into bite-sized pieces.
  5. Combine the cooked pasta, sliced chicken, and pesto in a large bowl. Toss well, adding reserved pasta water until desired consistency is achieved.
  6. Plate your Pesto Chicken Pasta and finish with grated Parmesan cheese.
