  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 cups fresh cilantro leaves, packed
  • 1 jalapeño, seeds removed (optional for heat)
  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Mix together olive oil, cumin, paprika, salt, and pepper.
  3. Rub the marinade over both sides of each chicken breast.
  4. Bake the chicken for 25-30 minutes, or until the internal temperature reaches 165°F (75°C).
  5. Combine the cilantro, jalapeño, mayonnaise, Greek yogurt, lime juice, minced garlic, and salt in a blender.
  6. Blend until smooth and adjust seasoning as necessary.
  7. Rest the chicken for a few minutes, then slice.
  8. Serve the chicken drizzled with the creamy green sauce and garnish with extra cilantro if desired.

Notes

For deeper flavor, allow the chicken to marinate for 30 minutes to an hour. Adjust the spice levels according to your preference.
