A moist and delicious zucchini bread made with garden-fresh zucchini, perfect for breakfast or an afternoon snack.

  • 1 cup grated fresh zucchini (about 1 medium zucchini)
  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 0.5 cups vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 0.5 teaspoon baking powder
  • 0.5 teaspoon salt
  • 1 teaspoon cinnamon
  • 0.5 cup chopped nuts or chocolate chips (Optional for added flavor and texture)

Instructions

  1. Prep the zucchini by washing and grating it, then squeeze out some excess moisture.
  2. Mix the wet ingredients: whisk together sugar and oil, add eggs one at a time, then vanilla.
  3. Combine the dry ingredients: sift together flour, baking soda, baking powder, salt, and cinnamon.
  4. Merge wet and dry ingredients, add zucchini and optional nuts or chocolate chips.
  5. Pour the batter into a greased loaf pan, smoothing the top.
  6. Bake at 350°F (175°C) for 50-60 minutes until a toothpick comes out clean.
  7. Cool the bread in the pan for 10 minutes before transferring to a wire rack.

Notes

For best results, always squeeze out excess moisture from the zucchini and customize with different add-ins like coconut or dried fruits.
