A warm, crunchy treat made with oats and peanut butter, perfect for breakfast or a snack.

  • 2 cups rolled oats
  • 1/2 cup peanut butter
  • 1/4 cup honey or maple syrup
  • 1/2 cup nuts (e.g., almonds or walnuts)
  • 1/4 cup seeds (e.g., pumpkin or sunflower)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1/2 cup dried fruit (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix together the rolled oats, nuts, seeds, and salt in a large bowl.
  3. Warm the peanut butter and honey (or maple syrup) in a small saucepan over low heat until melted and combined. Stir in the vanilla extract.
  4. Pour the peanut butter mixture over the oat mixture and stir until everything is evenly coated.
  5. Spread the granola mixture onto a baking sheet lined with parchment paper in an even layer.
  6. Bake for 15-20 minutes, stirring halfway through, until golden brown.
  7. Remove from the oven and let cool completely; it will harden as it cools.
  8. Stir in dried fruit if using and store in an airtight container.

Notes

Store in an airtight container at room temperature for up to two weeks or refrigerate for a month.
