Simple and nostalgic peanut butter cookies that are crisp on the outside and soft on the inside.

  • 1 cup sugar
  • 1 egg
  • 1 teaspoon baking soda
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) so it’s perfectly prepared for your cookies.
  2. Combine the peanut butter, sugar, egg, baking soda, and vanilla extract in a mixing bowl. Mix until you have a fully integrated dough that feels rich and creamy in your hands.
  3. Scoop out small portions of the dough and roll them into balls, about one-inch in diameter.
  4. Place the dough balls on a baking sheet lined with parchment paper and gently press down with a fork to create a crisscross pattern.
  5. Slide the baking sheet into your preheated oven and let the cookies bake for 10-12 minutes, until golden brown.
  6. Cool the cookies on the baking sheet for a few minutes before transferring them to a wire rack to cool completely before serving.

Notes

Store any leftover cookies in an airtight container at room temperature for up to one week. For longer storage, freeze in a freezer-safe bag for up to three months.
