  • 4 cups Baby Spinach or Arugula
  • 2 whole Ripe Peaches
  • ½ cup Feta or Goat Cheese
  • ¼ cup Red Onion
  • 1 handful Fresh Basil or Mint
  • ½ cup Toasted Pecans or Almonds
  • ¼ cup Extra Virgin Olive Oil
  • 2 tablespoons Balsamic Vinegar or Lemon Juice
  • 1 tablespoon Honey or Maple Syrup
  • 1 teaspoon Dijon Mustard
  • to taste Salt and Black Pepper

Instructions

  1. Prepare the Greens: Wash and dry your greens. Place them in a big salad bowl.
  2. Slice the Peaches: Cut peaches into wedges or cubes and nestle them in with your greens.
  3. Crumble the Cheese: Add the feta or goat cheese, crumbling it over the salad.
  4. Chop the Onion: Slice red onion thinly and sprinkle it on top.
  5. Add Fresh Herbs: Tear and scatter basil or mint leaves throughout the salad.
  6. Toast the Nuts: In a skillet, toast pecans or almonds until golden (about 5 minutes).
  7. Whisk the Dressing: Combine olive oil, balsamic vinegar, honey, and mustard. Season to taste.
  8. Assemble the Salad: Pour dressing over salad and toss to combine flavors.
  9. Garnish with Nuts: Sprinkle toasted nuts on top and give a light toss.
