A rustic peach galette that captures the essence of summer with juicy peaches wrapped in a flaky crust.

Ingredients

  • 2 to 3 ripe peaches, sliced
  • 1 pre-made pie crust or homemade shortcrust pastry
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 egg (for egg wash)
  • 1 tablespoon butter, cut into small pieces (optional)
  • Pinch of salt

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Toss the peach slices with sugar, cornstarch, vanilla extract, lemon juice, and a pinch of salt.
  3. Roll out your pie crust onto a baking sheet lined with parchment paper.
  4. Place the peach mixture in the center of the crust, leaving a 2-inch border.
  5. Fold the edges of the crust over the peaches, pleating it as necessary.
  6. Brush the crust with beaten egg and sprinkle with sugar.
  7. Dot the peaches with small pieces of butter if using.
  8. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown.
  9. Allow to cool slightly before serving.

Notes

This galette pairs beautifully with a scoop of vanilla ice cream or whipped cream.
