Ingredients

Scale
  • 2 cups sliced peaches
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup ice water
  • 1 egg (for egg wash)
  • 1 tablespoon sugar (for topping)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix the flour, 1/4 cup sugar, salt, and cinnamon.
  3. Add the cold, cubed butter to the flour mixture.
  4. Gradually stir in the ice water, one tablespoon at a time, until the dough forms.
  5. Turn the dough onto a floured surface and roll it out into a circle, about 12 inches in diameter.
  6. Place the sliced peaches in the center of the dough, leaving a generous 2-inch border.
  7. Gently fold the edges of the dough over the peaches.
  8. In a small bowl, beat the egg and brush it over the exposed dough.
  9. Bake in the preheated oven for 30-35 minutes, or until the crust is golden brown and the peaches are bubbling.
